Olive Pitting Machine

The olive pitting machine is multifaceted and used to extract oil from de-pitted olives and to process olive pâté for the canning industry. The pitting machine works continuously by compressing the fruits through a rotating reel, against a fixed cylindrical grille. The grille is interchangeable, and offers the possibility of working with holes of different diameters. The speed of rotation of the reel and the breaking action on the fruit is dramatically less violent than what happens with a metal crusher; as a result, pits are not crushed. In fact, we found that the use of our pitting machine only increases the paste temperature by 4°C/5°C, with respect to ambient temperature
